Make them click a buy button, not a form
An email address is a weak signal because it costs nothing to give. Putting a real purchase button on a mocked-up product, or taking presale money outright, filters for the only behaviour that predicts revenue, and it can be run as a variant test so the pitch and the demand get measured together.
The method

Run a fake door test: mock up the product, put a real buy button on the page, then send traffic at it and count who tries to pay.

Presell an ebook while testing the pitch, running A/B variants against the presale page so the copy and the demand get tested together.

Get a real sales page with working preorder buttons up before you go asking, then publish it, tweet it and email the whole list.
